Slow Cooker Beef Stroganoff Stew

Slow Cooker Beef Stroganoff Stew is a delicious twist on the classic Russian-inspired dish, made easier by using a slow cooker. This recipe brings together tender beef, savory mushrooms, and a creamy sauce that will warm you up on any chilly evening. With minimal hands-on time, it’s perfect for busy weeknights or leisurely weekends.
Using a slow cooker allows the flavors to meld beautifully and the beef to become melt-in-your-mouth tender. Plus, it frees you up to focus on other tasks while your meal cooks low and slow.
Ingredients
– 2 lbs (900 g) beef stew meat, cubed
– 1 medium onion, chopped
– 3 cloves garlic, minced
– 8 oz (225 g) mushrooms, sliced
– 1 cup (240 ml) beef broth
– 1 cup (240 ml) sour cream
– 2 tablespoons (30 ml) tomato paste
– 1 tablespoon (15 ml) Worcestershire sauce
– 1 teaspoon (5 ml) Dijon mustard
– 1 teaspoon (2 g) paprika
– Salt and pepper to taste
– 2 tablespoons (30 ml) all-purpose flour
– 2 tablespoons (30 ml) olive oil
– Fresh parsley for garnish
– Cooked egg noodles or rice, for serving
Preparation
1. Brown the beef in olive oil over medium-high heat to seal in juices and add flavor.
2. Sauté onions, garlic, and mushrooms, then mix in flour to thicken the stew.
3. Combine with broth, tomato paste, Worcestershire sauce, mustard, paprika, salt, and pepper.
4. Transfer everything to the slow cooker and cook on low for 6 hours until beef is tender.
5. Stir in sour cream shortly before serving to add creaminess without curdling.
6. Serve over egg noodles or rice and garnish with parsley.
Tips & Variations
– For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the stew 30 minutes before it’s done.
– Substitute Greek yogurt for sour cream for a tangier flavor and a healthier alternative.
– Add a splash of dry white wine when sautéing mushrooms for extra depth.
– Use fresh thyme or rosemary for an herby twist.
Serving Suggestions
Serve this beef stroganoff stew over classic buttered egg noodles or fluffy white rice. Pair with a simple green salad or steamed vegetables like green beans or broccoli for a complete meal. A crusty bread on the side is also great for soaking up the creamy sauce.
