- 1 pint cherry tomatoes, halved
- 2 cups fresh spinach
- 8 ounces pasta (penne or rigatoni recommended)
- 3 cups chicken broth
- 1/4 cup fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and sauté for 1 minute until fragrant.
- Stir in cherry tomatoes and cook for 2 minutes until they begin to soften.
- Add pasta, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer uncovered for 12-15 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
